In our household, one of the things we look for in a recipe is how quickly and easily can it be prepared. This is a regular “go to” recipe that is both healthful and easy to make. It is also delicious. I found this recipe at www.myrecipes.com, which is where I find many of my recipes. They have a wonderful advanced search where you can specify what type of recipe you are looking for such as, low carbohydrate, low fat, gluten free, among others.
SALMON WITH MUSTARD CREAM
4 (6 ounce) skinless salmon fillets
1/8 teaspoon coarsely ground black pepper
1/2 cup low-fat sour cream (I often use fat-free plain greek yogurt)
1-1/2 tablespoons Dijon mustard
1 garlic clove, minced
1/2 teaspoon coarsely ground black pepper
1-1/2 teaspoons lemon juice
1/2 teaspoon salt
2 teaspoons chopped fresh dill (I sometimes use freeze dried)
Cooking Spray
1. Preheat broiler
2. Place fish on a broiler pan; coat with cooking spray and sprinkle with 1/8 teaspoon pepper. Broil 8 minutes or until fish flakes easily when tested with a fork.
3. Combine sour cream and remaining ingredients in a small bowl; stir well
4. Place salmon on individual serving plates. Spoon sauce over fish
YIELD: 4 servings
